A small French mountain town about 350 miles south of Paris, Laguiole (pronounced lie-yole) is famous for its cattle, its cheeses, and its cutlery.The original Laguiole knife was made by ironsmiths in 1829 as a farmer's tool. One legend about the origin of the knife claims that a village inn-keeper's son invented this style of a folding knife, which little by little replaced the Capuchadou, a little folding knife, that herdsman carried in their pocket or wore on their belt. The farmer's tool was refined into the Laguiole steak knife, which is used today by many famous French restaurants as the meat-cutting tool of choice. The Laguiole with its gentle curving blade, the elongated pistol grip handle and a small bee set into the bolster has been the focus of many stories passed down from generation to generation. The bee is cut out of steel and decorates the knife bolster. The bee design is based on the imperial emblem of Napolean 1st, which was given as an award for bravery. From the beginning of the 1900's in order to satisfy an increasing demand for the Laguiole, the manufacturer moved to Thiers, the famous French cutlery capital for over five centuries. One cutlery tradition states, if a Laguiole is given as a gift between friends, the person who receives the cutlery must give a coin to the person who offers it.
